Grilled Grapefruit

Who said grillin’ is just for the fellas?  Not us!Grapefruit is known for being a great metabolism booster, add cinnamon which has fiber and regulates blood sugar and you’ve got one slammin’ summer slim down snack, sista.

Servings: 2

Time: 5-7 minutes

  • 1 grapefruit
  • 1 teaspoon of palm sugar, sucanat or organic cane sugar
  • 1 teaspoon cinnamon
  • 2 pinches ginger (optional)
  • 1/2 teaspoon vanilla extract (optional)

Directions

Wash grapefruit and cut it in half, along the hemisphere.  Use a small knife to cut around the outside of the grapefruit (between the fruit and the pith, which is the while part) then cut along each of the white membranes separating the sections.   This will make it much easier to scoop out the fruit later.

Top each half with some natural sweetener, a sprinkle of cinnamon and any other combination of spices you prefer. Spread them evenly on the face of the grapefruit

Heat a non-stick pan over medium-high heat. Place the grapefruit face down on the pan. Grill for 2-3 minutes, making sure not to burn.

Stand over the stove and take in the sweet aroma. Serve warm.

Simple Tahini Dressing

Few sauces are as simple and satisfying as this tahini.  We put it on our steamed veggies, grains, beans fish… and even as a dressing on salads.  Heck, we’d eat it straight from the jar with a spoon, it’s just that good!  Try it out and let us know what you think in the comments below…

Time: 3 minutes
  • 1/4 cup tahini
  • juice of 1 lemon (2 tablespoons)
  • 2 cloves garlic, minced
  • salt and pepper, to taste
  • water to thin (add 1 tablespoon at a time)
Directions
Combine all ingredients in a bowl or jar and mix well.  It may take some effort to incorporate the tahini in the liquid, be gentle and it will all come together.
