Saucy: Oatmeal Chocolate Chip PowerBalls

We proudly present another episode of our new HCC TV Show: Saucy where we provide practical answers to you culinary queries with some sass and some laughs.

This episode is something most of us can relate to: Sugar Cravings!

The issue is especially rampant this time of year with cookies baiting and tempting us at every turn!

Our motto? If you can’t beat ’em, join em!

We came up with a gluten-free, dairy-free, sugar-free, no-bake cookie that’s simple to make, satisfying and surprisingly delicious.

Let’s kick it back to our viewer.  Here’s what she had to say…

Dear Robyn + Quinn, My sweet tooth is out of control.  Like, I literally need something sweet every day around 4pm.  It’s so hard because the office candy bowl is always stocked full of Snicker’s minis and I have this one co-worker who is constantly bringing in cookies.  Why is she trying to destroy me?!  Is there something I can have to satisfy that sweet craving that isn’t a piece of fruit?  That never seems to do the trick.

Oatmeal Chocolate Chip PowerBalls
Servings: about 12 balls
Time: 10 minutes
NOTE: If you’re someone who doesn’t like a ton of sweets hanging around you can half this recipe like we did in the video.  If you want to share, make the full recipe (or even double it and store some in your freezer!).

  • 1 cup + 1 tablespoon rolled oats
  • 1/2 cup raw almond butter
  • 1 Tbsp. maple syrup
  • 2 Tbsps. dark chocolate chips
  • 1 Tbsp. pumpkin seeds
  • 1 Tbsp. hemp seeds
  •  ½ tsp cinnamon
  •  ¼ tsp sea salt

Directions

Stir together oats and almond butter.  Then add in maple syrup, seeds, chocolate, cinnamon and salt.

Mix until thoroughly combined (you can just go ahead and use your hands!). Add some more oats if mixture feels too wet.

Spoon out 1 tablespoons’ worth and firmly shape into a ball. You might need to firmly squeeze them into a ball so they keep their shape

Place on a container and put in the fridge to “set” for 30 minutes.

The Perfect Picnic

It’s the last official weekend of summer and we want it to go out with a bang.  Below is our Top 10 List of Picnic Must Haves to ensure you have equal parts fun and yumm in the sun.HCC the perfect picnic

1. It’s all about the blanket. We recommend something large and in charge that can accomodate all of your food & friends. Roll your blanket in this Pendelton carrier and it’s insta-picnic-chic.

2. Fun straws give your picnic a festive vibe.  Check out these adorable biodegradable straws.

3. For beverages, we recommend Belvoir Cordials. Mix it with some soda water and berries or spike it with your booze of choice. (Quinn<3s Tequila, Robyn + Vodka 4ever)

4. Bring along a salad like Holli Thompson’s Quinoa & Bean Salad with Mango.  This was definitely a crowd favorite during Salad Fest 2013.  Get the recipe HERE.

5. Seasonal fruit is a must. At this time of year we are bit past berries and totally onto stone fruit. Pick up some ripe peaches, plums and nectarines and you’ll be in heaven.

6. Also include seasonal fruit spread.  Before you know it, fall will be here so savor all the flavors of summer while you can! We adore Le Pain Quotidien’s Organic Strawberry Rhubarb Spread.  It’s made from great ingredients and is easy to find.

7. Cheeses. They’re a classic. We recommend asking your cheese monger for their recommendation for a good, organic goat or sheep’s milk cheese. It’s hard to go wrong with a goat brie or manchego.

8. It all comes together with the crackers. Some brand we love are Lesley Stowe’s Rain Coast Crisps, Mary’s Gone Crackers, and Edward & Sons Black Sesame Rice Crackers.

9. For dessert you must have chocolate.  We are obsessed with all things Gnosis, but especially their Fleur de Sel Bar.

10. You didn’t think we forgot about the basket?  It’s all about carrier.  We love this one from, where else but Target.

Chocolate Coconut Macaroons

Spring is in the air, and annoyingly desserts are ever present.  It’s always weirded us out that the Christians and the Jews have their most sugary-sweet holidays right before the weather turns warm. What’s up with that?

To combat the irony we’re sending you this stealth sweet treat.  What’s so stealth about a macaroon?  Well, it’s primarily coconut which is full of nutrients and healthy fats–that your body uses for energy.  This fat will keep you full and curb cravings for more of the sweet stuff.

Chocolate Coconut Macaroons

Yields: 10-14
Prep Time: 5-10 minutes
Total Time: 25-30 minutes

  • 2 egg whites
  • 1/4 cup organic granulated cane juice or organic sugar
  • 1-2 teaspoons vanilla extract
  • ¼ cup dark chocolate (bits at least 70% cacao)
  • 1 cup unsweetened shredded coconut
  • pinch of seasalt

Directions

Preheat oven to 325

Beat egg whites until totally frothy.  Add vanilla extract, sugar and salt. Mix well. Then fold in the coconut and chocolate chips

Drop tablespoons-size balls on a baking sheet lined with parchment paper.  Keep macaroons round, do not flatten.

Bake for 20 minutes.   Allow them to cool completely before diving in.
