Classic Bran Muffins

I always say I learned to cook as a baby and that is in thanks to my incredible chef of a mom.  My mom would cook a huge family dinner every single night and put me down for my nap in the bassinet beside her while she made each meal with love.  Coq au Vin, Chocolate Souffles and Chicken Piccatta (all from scratch) were regular nightly occurrences.  You’d think she was born in the kitchen but that certainly was not the case!  Before my mom met my dad she could barely boil water!  My dad’s favorite thing in the world was to eat (I come by it honestly!) and so she figured she’d better get cookin’!  She enrolled in some cooking courses with the famous chef Paul Martin, found her love of cooking and the rest is history.

As soon as I could hold a spoon I was begging to mix whatever she would allow me to and this was the recipe I was typically mixing (while she begged me to stop mixing so I didn’t ruin her creations!).  I followed my mama everywhere and it seemed that these classic Bran Muffins did (and still do) too.  They’re her favorite breakfast, toasted with a little jam and butter, a perfect treat for Mother’s Day.

So Happy Happy Mother’s Day mama and thank you for being my biggest cooking inspiration, fan and best friend.  I can’t thank you enough for all the hours we spent together in the kitchen while I sat on the counter mixing away just talking about our days.  I wouldn’t have any of this without your patience, and love, inside and outside of the kitchen.  Love you always.  And I promise to make you a healthier version of these muffins ASAP.  :)

This recipe uses traditional baking ingredients but I’ve included some swaps in parentheses below if you’d like to make it a little more {Healthy} Cooking Campified.  They contain a lot of fiber, perfect for busy moms.  ;)

Classic Bran Muffins
Time: 30 minutes
Servings: 12

Dry Ingredients

  • 1/3 cup brown sugar (swap for coconut sugar)
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cranberries, raisins or chopped dried apricots (Robyn’s favorite) -Optional
Wet Ingredients
  • 1 cup All Bran cereal
  • 1 cup of milk (cow’s, almond, soy or coconut would all work)
  • 1 egg
  • 1/4 cup vegetable oil (swap for melted coconut oil)
Directions
Preheat the oven to 400 degrees.  Take one large bowl and mix your dry ingredients together.  In another bowl mix the cereal and milk and allow to sit for a couple of minutes to soften.  Add remaining wet ingredients and dried fruit if using and combine.  Add wet ingredients to dry ingredients and mix until just barely combined (don’t pull a baby Robyn and over mix!).Spray baking sheet with non-stick cooking spray (we recommend coconut oil) and divide muffin mixture evenly.  Bake for 20 minutes.  Pull from oven cool and serve.

Bonus Detox Tips from Gingersnap’s Founder

We asked cleansing guru and Gingersnaps founder, Jamie Graber, for some of her top tips for getting the most out of a cleanse and this is what she had to say…

My main goal with the [GO] Cleanse is to get people to look at their habits with food.  Pay attention to how much they eat, when they aren’t really hungry.  How large a portion should be, and how you should feel after you eat, the idea is not to be stuffed, but satisfied.

  • I suggest people start with a liquid cleanse, that helps to clear the pallet and stop cravings.
  • If you have a practice, do yoga during cleanses, especially ones with lots of twisting…It helps to “ring” out the organs.
  • If you need an extra snack during the cleanse, munch on some raw carrots or celery which are naturally detoxifying.
  • If you’re feeling extra stuck, a colonic or an enema is also a great addition.
  • When it’s time to go back to “normal” life, do it slowly and mindfully.  Introduce things one at a time and feel the effect on your body, and if doesn’t feel good then leave it out.
  • Notice how you feel after eating only organic, gluten free, vegan unprocessed foods… you may want to keep it up!

Read this before you freak out about bikini season

Spring is finally here, thank god! Though the promise of trading in your heavy sweaters for sundresses is exciting, we know the idea of needing to get into a bathing suit in a few months can bring up some serious anxiety.

But the last thing we want for you to is to get caught up in some crazy diet that’s going to send you to crazy-town with no lasting results (remember last year?). If there’s one thing we’ve learned over the years it’s that depriving and restricting ourselves to be “bikini ready” is no fun at all, and rarely works.

Even when we want to be thin so badly, and we convince ourselves that suffering for just 4 weeks will be completely worth it, we last 3 days and then find ourselves a billion Banana Bread Muffins later, feeling embarrassed and like a total failure. So instead of letting you make the same mistake you’ve made year after year, we wanted to bring in some back up to set you on a completely new path. One that’s fun, sane and actually works.

You may know our girl Sarah Jenks, but if you don’t, she’s a badass when it comes to helping women create a life they love and a body they adore.  Sarah’s approach is completely counterintuitive and probably not something you’ve tried before so we wanted to do an interview with her so you can get in on the awesomeness.

HCC: Sarah, I’m so excited to jam with you about this tricky topic of “weight loss”. Diving right in, can you tell us a little about yourself and how your approach to weight loss is different?

SJ: I’m so excited to share this info with your ladies! Thanks so much for the opportunity. I work with women who’ve been struggling with their weight for years (and find that traditional diets don’t work for them) finally shed the extra weight by creating a fun, meaningful and romantic life. I find that most women have been taught that if they can “buckle down” and muster up enough willpower that they can lose a lot of weight in a short amount of time. And though it’s hard to admit, a lot of us think that losing 20 or 30 pounds is what’s going finally make us feel beautiful, carefree and happy.

We think that weighing less will make our lives better, I call this the “Weigh Less, Live More” mentality. But so many of us use food to feel entertained, comfortable and loved. So when we’re waiting for our lives to begin when we’re thin, our lives aren’t super interesting, and we eat to cope with boredom, challenges, anxiety and loneliness.

I teach my clients how to create a fun, meaningful and romantic life NOW, not 20 pounds from now.

Not only do these women start having a blast and are finally seeing the goals they’ve had for years (like new businesses and meeting their soul mate) come true but they no longer need food to keep them entertained so they naturally shed those extra pounds without counting calories or stepping foot on a treadmill. I call this the Live More, Weigh Less philosophy.

HCC: How did you get started as a coach?

SJ: When I was about 10 years old, the kids at school made fun of me for being fat, so I went to Weight Watchers to lose weight. Starting then I had this idea that losing weight would be the magic pill for happiness. So I was on and off diets almost every other week, but I could never stick to anything because I had no “willpower”.

By the time I was in my early 20’s my life felt like it was falling apart. I was in a job I hated, I could barely make rent every month, I was picking fights with my boyfriend, was embarrassed to be naked in front of him and spent most days medicating my misery with food and alcohol. I was starting to lose friends and came really close to being dumped by the man of my dreams.

One day, on the third day of my seven day juice cleanse I ate a whole bag of Dove Chocolate Promises while hiding in the supply closet at work. That’s when I realized that if the whole diet thing was gonna work, it would’ve happened by now. So I started looking for a new approach.

Very quickly I realized that I thought my life was terrible because I was fat, but the truth was that my life sucked because I was putting in no effort, and the misery was causing my nightly binges.

So I started consciously having more fun, working on my relationship and shifting things at work. Pretty quickly my life did a 180. My man proposed, I got promoted at work, I made tons of new friends and enrolled in nutrition school. And the thirty extra pounds I was carrying around melted away. It was awesome. I was so floored by this new way of doing things that I’ve created a movement around helping women understand and use this new approach to weight loss called Live More Weigh Less.

HCC: What’s the first step someone should take to start living more and weighing less?

SJ: First of all, it’s really important to have a plan or a roadmap for how to do this right. When we’ve spent our whole lives doing things one way, it’s easy to get caught up in the diet cycle and lose our way again. I’ve actually made a really cool video training that’s totally free that your ladies can check out. They can get instant access HERE.

In the first video I lay a very simple but important step-by-step roadmap to creating an amazing life and body you adore.

The next thing you need to do is just have as much fun as possible, I can’t stress the importance of this enough. Dance wildly in your kitchen, call up a girlfriend and go for a walk, get a back massage, watch a funny movie, take off on an impromptu road trip, paint, sing and skip.  When you’re having a blast, I guarantee you’ll stop overeating.

The third thing I’d recommend is finding a group of women who are on the same path. We’ve got so many incredible women participating in the video training, it’s a great place to connect with people, get inspiration and support.

HCC: What do you say to someone who is dying to lose weight fast to get into a bathing suit?

SJ: This is a toughy because I know how real that desire can feel, but the way I see it, you have a choice. You can spend your life trying to accomplish this goal of being thin by restricting and depriving your food, which almost always results in more anxiety and depression than you’re already feeling, with little to no results at the end. Or you can put down your obsession, and start focusing your energy on what really matters like having fun, shifting things at work and working on your relationship.

You’ll quickly see that life can be amazing, even if you don’t look like a swimsuit model. Plus, you’ll naturally move to your ideal weight. And what’s awesome is that maintaining it is super easy because you’re not on some crazy diet.

Homemade Veggie Stock

My faaavorite feeling in the world is when I finally do something that I’ve been super scared of/ intimidated by and realize that it was super easy and fun!

That’s what happened when I made Vegetable Stock.  Ok, maybe “fun” is taking it a little too far, but it was super easy and now I have every intention of making it all the time.  For example, I’m moving next week into my own big girl apartment (YAY!) and veggie stock will be the first thing I throw on my stove to infuse my space with the smell of HOME.

Here’s the recipe.  I’m going to give to you to grandma style with no formal measurements because I think that’s the best way…  Just know, no matter what, you will create a flavorful base for any soup.  There is no right way, or wrong way to make veggie stock.

Vegetable Stock

Servings: depends what you’re using it for.  probably around 6-10
Time: 2 + hours

  • 2-3 carrots, chopped
  • 2-3 celery stalks, chopped
  • 4 yellow onions, large dice
  • A BIG soup pot filled 3/4 of the way with water
  • 2-3 cloves garlic (optional)
  • 2-3 bay leaves (optional)
  • Some fresh herbs, like thyme or rosemary (optional)

Directions

Put everything in your large soup pot and bring to a boil.  Then, reduce to a simmer and allow it to cook for 2 hours.  Strain out all of the veggies and herbs.  Cool and store in an airtight container or jar.  That’s all, folks.
