Recipe: Pecan Candy

We’ve been getting emails all week about the recipes we made at the Slumber Party last week.  But one thing seemed to stand out in particular…

We’ve been getting raves and we mean raaaaaves about the Pecan Candy.

People wrote to us saying they put in on their oatmeal in the morning, over their roasted brussels sprouts and at night and one brilliant person is even planning on making these her go-to holiday gift from now on!

So for anyone who missed it, here they are again. Try them. You’ll love them.

Pecan Candy
Servings: about 8
Total Time: 6-7 minutes

  • 1 cup raw pecans, chopped
  • 1 tablespoon coconut oil
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Pinch sea salt
  • ½ teaspoon of ground cinnamon

Directions
Add chopped pecans to a dry skillet and toast for 3-4 minutes over a medium flame.

Once the nuts become then add the coconut oil, maple syrup, vanilla extract, salt and cinnamon, and turn flame to low and continue to stir for another couple minutes until it’s clear that the maple syrup has caramelized on the pecans, about 2-3 minutes.

Spread the pecan candy out onto a large plate and allow them to cool completely before eating. (They just taste better when they’re cooled!)
