What Do You Eat, Amanda Russell?

Fitness Expert Amanda Russell is always on the run. Literally.  So, we invited her into the HCC kitchen to tell us a little about what fuels her busy life.

We love how empowered she is to eat healthy in any situation.  It doesn’t matter if you’re at a gas station or a diner there is ALWAYS a healthy option, you just have to ask for it.

Recipe: Amanda’s Perfect Parfait

A busy life calls for proper nutrition. Whether you’re hitting the gym or just running around doing errands it’s important to eat the right foods to keep you going strong. (no one wants to crash and get all hangry (hungry+angry=hangry).

Amanda gave us some amazing ideas for power foods and shares this super easy, protein packed recipe that keeps her full and fueled for her busy life.

Amanda’s Perfect Parfait

Serving: 1
Time: 3 minutes

  • 1 cup greek yogurt
  • 1/4 cup fruit
  • 1 tablespoon chia seeds

Directions

Layer everything in a cup or bowl then mix well.  You can let it sit and allow the chia seeds to expand and soften or eat it right away and get that ch-ch-ch-chia crunch.
