But, here’s the thing: WE’VE ALL BEEN MAKING IT WRONG.
The package gives directions that leaves us with a mushy mess. Sure, it still tastes fine, but at HCC fine isn’t good enough. We want great! So, we messed with the proportions a bit and figured it out. (If you’re too anxious, skip to 1:30 in the video for the massive revelation)

Recipe: Orange + Walnut Quinoa
The sweetness of the citrus, freshness of the parsley and the earthiness of the walnuts make for one wonderful dish. Such diverse flavors and yet, so simple!
Don’t have oranges, go with lemon, lime or grapefruit. No walnuts around? Swap them for sliced almonds, cashews, pecans or pumpkin seeds.

Orange and Walnut Quinoa
Prep Time: 5 minutes
Cooking Time: 20 minutes
Yields: 4 servings
Ingredients
- 1 1/2 cups dry-roasted quinoa
- 1 1/2 cups veggie broth or water
- 2 navel oranges, zested
- 1/2 cup chopped, toasted walnuts
- 2 tablespoons flat leaf parsley, chopped
- 1 tablespoon extra virgin olive oil
- Sea salt and black pepper
Directions
Rinse quinoa in a fine mesh strainer. Combine broth, quinoa, extra virgin olive oil, sea salt and black pepper. Bring to a boil, then cover and reduce heat to low. Set a timer and let it cook for 15 minutes.
After the 15 minutes, remove pot from heat and let stand for 5 minutes to allow the quinoa to steam.
Fluff with a fork and toss in orange zest, parsley and toasted walnuts. This makes a simple, elegant and delicious side dish.

Quinoa Salad w/ HCC Special Sauce
Super Power Quinoa Salad
- 1 cup quinoa
- 1 cup water
- 1 tablespoon extra virgin olive oil
- 1 teaspoon sea salt
- 1/4 teaspoon black pepper
- 2 cups arugula or baby spinach
- 2 tablespoons dried fruit (cranberries, raisins, apricots, dates…)
- 2 tablespoons nuts and/or seeds (pumpkin, sesame, hemp, almonds, walnuts, cashews…)
- 1/2 cup special sauce (see below…)
Special Sauce
- ¼ cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- 1/4 cup maple syrup
- 1/4 cup tamari
- 2 cloves garlic, finely minced (we recommend a garlic press or microplane)
Directions
To prepare the quinoa put the quinoa, water, olive oil, salt and black pepper in a pot and bring to a boil. Cover, then reduce to a simmer and cook for 15 minutes. Remove pot from heat and allow to sit for 5 additional minutes.
While quinoa is cooking prepare the Special Sauce. Combine all ingredients in a jar and shake well.
After the quinoa is done, fluff with a fork and put it in a large bowl with the arugula or spinach. Throw in nuts and seeds and dress quinoa salad with the Special Sauce. Adjust sauce, to taste. This dish is great both hot or cold.
